Oh Monday. Must you?
I had a busy/fun weekend with a re-do of Galentine’s Day on Friday evening with my sisters (the first one got cancelled when everyone in the family came down with strep throat within a few hours of each other), and a trip to the National Museum of the Pacific War and Nimitz Museum in Fredricksburg with my parents on Saturday. Will and I have been on a major World War II kick since we visited Pearl Harbor back in December, so we took down 5 hours in a history museum like champs.
My Dad is a bit of a history buff (honestly, he’s an everything buff), so I stuck close to him to ask him lots of questions. Which he loved, hopefully.

What we’re eating:
I made this healthy, low fodmap sweet and sour chicken dish last night for family dinner and it was SO GOOD. I have made many a “healthy” asian dish that came nowhere close to the ‘just like takeout!’ tagline the recipe claimed, but this one was pretty dang close.
What I’m looking forward to:
Just when we thought the marriage marathon was coming to an end, one of my bridesmaids (and friend of 17 years), and one of Will’s groomsmen got engaged. We will now have a wedding in October, followed by one in November. I’m hoping we can restart the whole ‘one wedding a month’ thing we became so fond of our first year of marriage.
I mean seriously, lifetime commitment + cake + dancing? I’d go to a wedding every weekend.

I have a major thing for freckles. That is very real.
What I’m Pinning:
My downstairs neighbor has a serious green thumb and her lush, beautiful garden is putting us to shame. Now, I am a known plant killer… but that may be because I am also known to live in places with very few windows. I killed a succulent last year. A succulent.
Our current apartment has lots of sunlight (too much sunlight some might say, we are probably going to cook come July), and an enormous second floor bonus deck. I have been pinning ‘rooftop’ gardens like crazy, and have made several tentative trips to Home Depot just to look. And you know, let the plants know I am not there to hurt them.
